Italian food technology company Biorsaf has raised €5.2 million in fresh funding and acquired Bologna-based Cooki, combining the two businesses to create a broader digital platform for food safety, quality, traceability, and regulatory compliance.

The deal brings together Biorsaf’s food-safety and compliance technology with Cooki’s digital food-information platform, creating what the companies describe as an integrated solution covering the major compliance and data-management needs across the food value chain—from HACCP and quality management to traceability, nutritional information, food costing, and labelling.

€5.2 Million Round Led by

The latest funding round was led by P101 SGR, with participation from existing investors Maia Ventures, Farming Future – the National Technology Transfer Hub for AgrifoodTech, and Toscana Next.

Farming Future was also an investor in Biorsaf’s first funding round in November 2024.

For Biorsaf, the combination of new capital and the Cooki acquisition marks the beginning of a new phase of growth, with the company planning to expand both organically and through further market consolidation and technology development.

Bringing Food Compliance and Data Management Together

Biorsaf was founded in 2021 in Castell’Azzara, Grosseto, and has developed BS-Safe, a vertical software platform designed to digitise food safety, workplace safety, and water-quality management.

The platform allows businesses to replace paper-based processes with digital workflows, automate checks and controls, improve traceability, and manage regulatory data from a central system.

According to Biorsaf, its technology can save users around 30 minutes of work per day, while the company estimates that it helped reduce operating costs by approximately €30 million across active users during 2025.

AI at the Centre of Food Safety Management

One of Biorsaf’s key developments is an AI agent dedicated to digital food safety management.

The technology is designed to support specialist consultants and businesses by automating activities such as monitoring, compliance processes, and document management.

Rather than treating food safety as a collection of disconnected administrative tasks, Biorsaf is building a more unified digital environment where businesses can manage compliance, operational information, and safety processes through a single platform.

Cooki Acquisition Expands the Platform

The acquisition of Cooki significantly broadens Biorsaf’s capabilities.

Founded in 2017 by Giuseppe Grammatico, Cooki is a Bologna-based platform focused on the digital management of food information. The company is now active in more than 450 Italian cities, with over 1,000 users and a database containing more than 35,000 coded products.

Cooki's technology helps businesses manage several important areas, including:

A Three-Year Growth Plan

The funding and acquisition form part of a three-year growth strategy for Biorsaf.

The company expects revenues to grow significantly year after year while expanding its workforce from approximately 40 employees to 120 within the next 18 months.

At the centre of this strategy is the development of what Biorsaf describes as a unique AI-powered platform capable of transforming and automating quality, safety, and operational management across the food sector.

Targeting a Large but Under-Digitised Market

Biorsaf sees significant room for growth in Italy’s food, workplace, and water-safety markets.

According to the company, the sector includes approximately 3.4 million businesses generating more than €12 billion in revenue, while digital adoption remains at only around 3%.

That gap presents a substantial opportunity for technologies capable of replacing paper-based processes and fragmented compliance systems with connected digital workflows.

More Than 10,000 Active Users

Biorsaf has built a customer base of more than 10,000 active users in just three years.

Its customers range from smaller businesses to major restaurant and food-service groups. Among them are Gruppo Cigierre and Compagnia Generale Ristorazione, which operates brands including Old Wild West, America Graffiti, Pizzikotto, Wiener Haus, Shi’s, and Smashie.

The company also serves large-scale retail operators, including Conad, giving the platform exposure across different parts of the food industry.

Building Italy’s Food RegTech Platform

The combination of Biorsaf and Cooki represents more than a conventional acquisition. It brings together two complementary technology platforms with the ambition of creating a single digital infrastructure for food compliance and operations.

With fresh funding from P101 and its other investors, an expanded technology stack, more than 10,000 active users, and plans to grow its workforce threefold, Biorsaf is positioning itself to become a major player in Italy’s emerging Food RegTech market.

The company's next phase will focus on scaling AI-powered automation, expanding its customer base, and continuing to consolidate a market that remains highly fragmented and relatively under-digitised.
